VERGIE'S SQUASH DRESSING

Let me just say that as far as I know all three of our girls still HATE squash, but they have each eaten this recipe and not uttered a word.  Either they could not tell the difference in it and regular cornbread dressing or it just tasted so good they never realized it was squash.  Anyway.....it is a keeper.

2 c. cooked stewed down fresh squash (usually this is some that is left over from a previous meal and
       already has some onion and seasoning in it)
2 eggs, beaten
1 can cream of chicken soup, undiluted
1 med. onion, chopped
1 stick oleo
2 c. corn bread crumbs
Salt and pepper to taste
1/4 t. dried oregano
1/4 t. dried parsley

Saute' onion in oleo.  Mix all ingredients together and pour into greased baking dish.  Bake at 350 degrees for 30-40 minutes or until lightly browned around the edge.

Mamaw Duke's next door neighbor and friend of many, many years, Virgie Walker, gave this recipe to me not too long before she passed away in 1991.  It has been enjoyed many times since then.  When served on Thanksgiving or Christmas, most people do not even notice it is squash.
