BROCCOLI CASSEROLE

This is one of Tonya's favorite casseroles, but not so much with Ginger. 
It can be frozen and reheated within a few months. 
It is an excellent holiday dish.

2 c. broccoli - steamed to just tender
1 c. uncooked white rice - cooked in salted water until tender/drain
1 stick melted margarine or butter
1 small onion finely chopped (I saute' in the butter in small skillet until transparent)
1/4 c. bell pepper finely chopped (I saute' in the butter with the onion)
1 can Cream of Chicken Soup
1/2 c. milk
1/2 lb. Mexican Velveeta Cheese

Mix steamed broccoli, cooked rice and all other ingredients together in baking dish.  Bake at 350 degrees until bubbly and lightly brown around edges.
